- 1 cup cherry tomatoes, halved

- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water until water runs clear. In a medium saucepan, combine quinoa and water. Bring to a boil over medium heat, then reduce to low. Cover and simmer for about 15 minutes until liquid is absorbed. Fluff with a fork and let cool.
- While quinoa cooks, chop cucumber, halve cherry tomatoes, and finely dice red onion.
- In a large bowl, combine cooled quinoa, chopped veggies, and mint.
- In a small bowl, whisk together lime juice and olive oil; season with salt and pepper.
- Pour dressing over the salad mixture and toss gently to combine.
- Chill in the fridge for about 30 minutes before serving.
