- 2 tbsp olives (optional), chopped
Instructions
- Hard boil the eggs by placing them in a pot covered with cold water. Bring to a boil, then simmer for 9-12 minutes. Transfer to an ice bath to cool.
- Once cooled, gently peel the eggs under running water. Slice each egg in half lengthwise and scoop out the yolks into a bowl.
- Mash the yolks with mayonnaise and mustard until smooth. Mix in diced bell peppers, chives, and optional olives. Season to taste.
- Spoon or pipe the filling back into the egg whites and sprinkle with paprika for garnish.
