  • 6 large hard-boiled eggs
  • 1/4 cup mayonnaise
  • 1 tsp mustard (Dijon or yellow)
  • 1/2 tsp paprika (plus extra for garnish)
  • 2 tbsp fresh chives, finely chopped
  • 1/4 cup bell peppers (red, yellow, or green), diced
  • 2 tbsp olives (optional), chopped

Instructions

  1. Hard boil the eggs by placing them in a pot covered with cold water. Bring to a boil, then simmer for 9-12 minutes. Transfer to an ice bath to cool.
  2. Once cooled, gently peel the eggs under running water. Slice each egg in half lengthwise and scoop out the yolks into a bowl.
  3. Mash the yolks with mayonnaise and mustard until smooth. Mix in diced bell peppers, chives, and optional olives. Season to taste.
  4. Spoon or pipe the filling back into the egg whites and sprinkle with paprika for garnish.
  5. Serve immediately or chill briefly before serving.
