  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Prepare all vegetables by chopping the carrots, dicing the onion, and slicing the garlic.
  2. In a large pot over medium heat, drizzle olive oil and sauté onions until translucent (about 5 minutes).
  3. Add carrots and celery; stir for another 5 minutes until they soften.

  5. Pour in vegetable stock, add thyme and bay leaf; bring to a boil then reduce heat to simmer for 20 minutes.
  6. Add zucchini in the last 5 minutes of cooking; season with salt and pepper before serving hot.
