  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 3 large eggs (room temperature)
  • 1/2 cup vegetable oil (or applesauce)
  • 2 tsp vanilla extract
  • 1/2 cup raw honey
  • 1 cup powdered sugar (for icing)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla until smooth.
  4. Gently fold the dry ingredients into the wet mixture until just combined.
  5. Pour half of the batter into the prepared dish. Drizzle with half of the honey. Top with remaining batter and swirl gently to create patterns.
  6. Bake for 30-35 minutes until golden brown and a toothpick comes out clean.
  7. Allow to cool slightly before drizzling with icing made from powdered sugar and milk.
