- 1. Bloom the gelatin: In a small bowl, mix gelatin powder with warm water and let it sit for 5 minutes until dissolved.
- 2. Heat the base: In a saucepan over medium heat, combine coconut milk, sugar, and vanilla extract. Stir until heated through but not boiling and sugar dissolves.
- 3. Blend in the mango: Puree fresh mango until smooth. Add it to the coconut mixture along with the bloomed gelatin, stirring continuously until combined.
- 4. Chill: Pour into individual serving cups or molds and refrigerate for at least 4 hours or until set.
- 5. Serve: Top with extra mango puree or fresh fruit slices before serving.
