- ¾ cup granulated sugar
- 1 cup pineapple chunks (fresh or drained canned)

- 3 large eggs
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a bowl, mix graham cracker crumbs with melted butter until combined. Press into the pan and bake for 10 minutes until golden.
- In a large bowl, beat softened cream cheese until smooth; gradually add sugar, then mix in coconut cream and vanilla.
- Add eggs one at a time, mixing gently after each addition. Fold in pineapple chunks carefully.
- Pour the filling over the crust and bake for about 30-35 minutes until edges are set but center is slightly jiggly.
- Let cool completely before refrigerating for at least 4 hours. Cut into bars and serve chilled.
