  • 2 cups fresh carrots, diced
  • 2 cups celery stalks, diced
  • 1 medium onion, chopped
  • 4 garlic cloves, minced
  • 2 cups egg noodles
  • 8 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients: Chop onions, carrots, celery; mince garlic.
  2. Sauté aromatics: In a large pot over medium heat, add olive oil and sauté onions until translucent (about 5 minutes). Add garlic for an additional minute.
  3. Add chicken & veggies: Mix in carrots and celery with the chicken breasts. Pour enough chicken broth to cover all ingredients.
  4. Bring it all together: Increase heat until boiling, then reduce to simmer for about 20 minutes until chicken is cooked through.
  5. Add noodles & herbs: Shred the chicken using two forks and return it to the pot. Stir in egg noodles and cook for 8-10 minutes until tender.
